Let's face it: Paoli is not Vail, and we should adjust our skiing/snowboarding expectations accordingly. As a rather nervous snowboarder who dislikes both heights and speed, I'm perfectly fine with gentle hills around Paoli. I came to Paoli for my first outing of the season to sate my curiosity about the place, and to get my "ski legs" back after months away. It did that job just fine. Not all of the runs were open, but the ones that were posed very little degree of difficulty. Great for me! For your après-ski needs, there's a snack bar in the lodge, plus a bar that's a bit quieter and features few local beers on tap. Will I come back? 100% yes.
